The past couple days the temperatures here in Northeast Wisconsin are falling as fast as the leaves. I have switched into comfort mode. The sweaters have been pulled from the closet, blankets unearthed and my cookbooks poured over with renewed vigor. Yesterday I made butternut bisque and it was incredible (recipe is below). I forgot how much I enjoy butternut squash - and also didn't remember how labor intensive it is to cut a squash up! Next time I will pick up the pre-cut squash at the grocery store. Today I made a warm reuben dip with pumpernickel bread. Next up will be roasted pumpkin seeds. With everything going on in the world today, we could all use some cozy right about now. I found a few Scriptures that seem to fit the cozy mood. "Praise be to the God and Father of our Lord Jesus Christ, the Father of compassion and God of all comfort, who comforts us in all our troubles, so that we can comfort those in any trouble with the comfort we ourselves receive from God." 1 Cor. 1-3 "Fear not, for I am with thee; be not dismayed; for I am thy God: I will strengthen thee; yea I will help thee; I will uphold thee with the right hand of my righteousness." Isaiah 41:10 "God is our refuge and strength, an ever-present help in trouble." Psalm 46:1 BUTTERNUT BISQUE 2 medium carrots, sliced 2 celery ribs, chopped 2 medium leeks, sliced (I substituted yellow onion) 1/4 C butter 2 pounds butternut squash, peeled, seeded and cubed (about 6 C) 2 cans (14 1/2 oz each) chicken broth 1/2 tsp ground ginger 1/2 C half-and-half cream (I substituted evaporated milk because I had no cream in the house) 1/2 tsp salt 1/4 tsp pepper In a large saucepan, saute carrots, celery, leeks (or onions) in butter for 10 minutes. Add the squash, broth and ginger; bring to boil. Reduce heat, cover and simmer until the squash is tender, about 25 minutes. Cool until lukewarm. In a blender or food processor, puree squash mixture until smooth; return to the pot. Add cream, salt and pepper; mix well. Heat through but do not boil. Yield: 2 quarts

Wonderful blog post! I don't care for really cold weather, but I love wearing sweaters. And I will try that recipe. :)

Thanks! I love sweaters, too - so cozy! But, yes, the really cold weather is tough to deal with at times. I was watching "Life Below Zero" showing how Alaskans deal with -57 temps - it's crazy!

Betty, I'm glad to hear you love butternut squash, too! Thanks for the comment, the picture was taken at a local nature center. I like to retreat there often to recharge my batteries.
